People search for this exact question, so here is a straight answer rather than a sales pitch. Booking the suite with somebody you have been seeing for three weeks is fine for some pairs and a poor idea for others, and the difference is predictable.
What makes it easier than people expect is that a massage is not a face-to-face activity. You are not sitting across a table hunting for conversation. You are both lying down, mostly quiet, eyes closed, in low light, doing separate things at the same time. There is no performance required from either of you, which is more than can be said for most third dates.
What makes it harder is the obvious thing. Undressing, in a room, near someone you do not know well, for an hour. The draping is thorough and you are covered throughout, but the situation is still more exposed than dinner, and it is worth being honest with yourself about whether that will land as relaxing or as a low hum of self-consciousness for sixty minutes.
If you go ahead, a few choices make it work better.
Take the shortest length. Sixty minutes, $165. Two hours together in a dim room with somebody new is a long time, and there is no prize for endurance.
Say it out loud beforehand rather than presenting it as a fait accompli. Asking whether they would like to do this is a completely different proposition from booking it and announcing it. The second version puts them in the position of having to decline something you already paid for.
Go earlier in the day rather than late in the evening. An afternoon booking reads as an activity. A ten at night booking reads as something else, whether or not you meant it that way.
Have a plan for afterward, even a small one. Coffee, a walk, food. Coming out of a massage is a soft, slightly slow state, and standing in a parking lot deciding what happens next is the worst use of it.
If the exposure part is genuinely the sticking point, there is a simpler option that nobody mentions. Book two individual massages at the same hour instead. You arrive together, you are worked on in separate private rooms, and you meet in the lobby afterward. Individual sessions start lower on the menu than the couples rate, you get the shared outing, and neither of you spends the hour thinking about being watched. Ask about it when you call.
Whatever you decide, do not treat the hour as a test of anything. Whether two people enjoy a stretch of separate silence in a dim room says almost nothing about whether they are right for each other, and reading it that way puts a great deal of weight on one appointment. It is a massage. Two of them, in the same room.
The suite will still be there in four months, when the same booking is an entirely uncomplicated thing to make.
